Apple Cashew nut Cake


It was when we came from Apple picking & could not think what to do with soooo many apples..... well one idea was to distribute them to all our friends.. but they too came with us for apple picking . Hmmm now what..?

We made some apple sauce for my daughter, she was too old for it but she likes it :). then what ? And my friend said she can bake some pie & cakes for me (that's b'cas i didn't know baking....). And this way i learnt to bake cake.... And that's why this cake is soooo special for me, its was my first successful cake :))

Apple Cashew nut Cake
You need:
Maida - 3 cups
Oil - 1 1/2 cups
Sugar - 2 1/4 cups
Eggs - 3 no.s (room temperature)
Vanilla - 2 drops
Cashew nut - 1 1/4 cups (fry in little ghee)
Salt - a pinch
Cooking soda - 3/4 tbsp
Apple - 3 1/4 cups (peeled & chopped to medium size)


To do:
Preheat oven at 350 F for 10 mins.
Sieve maida, cooking soda & salt together.
First beat eggs in a big bowl with vanilla & then add oil & sugar to eggs & beat well.
Now add maida into the beaten egg & mix well.
Put apple & cashew nuts (it will be a really thick batter), if you want you can add little room temperature milk to make the batter of your consistency.
Pour in the baking pan & set at 350 F for 45 mins to 1 hr.
Once the cake is baked put powdered sugar or chocolate frosting over it.


For Chocolate frosting:
Coco - 2 tbsp
Butter - 2 tbsp
Milk - 1/2 cup
Sugar - 1/2 cup
Mix all the above ingredients in a pan & boil on a medium flame.
Put one drop in water, it should float & not dissolve.
Let it cool & pour over the baked cake when its cooled.

Ahha now enjoy the cake with cup of Coco or Coffee. Here my daughter is having her Coffee (she thinks but its chocolate milk) party with me.
